Dark Chocolate & Pistachio Cookies
The combination of dark chocolate and pistachios is honestly a match made in heaven. These are oat based cookies which add that extra nuttiness and richness.
Servings: 12 cookies
- 140 g melted vegan butter
- 80 g white sugar
- 120 g dark brown sugar
- 30 ml unsweetened vegan milk
- 125 g plain flour
- 140 g rolled oats
- 75 g ground pistachios
- 60 g 70% dark chocolate
- 1 tsp vanilla bean paste
- 0.5 tsp bicarbonate soda
- 0.3 tsp baking soda
Pre-heat oven to 170c
Combine the melted butter, milk and sugars. Whisk till silky smooth.
Add the rolled oats, plain flour, bicarbonate soda and baking powder. Mix till everything is combined.
Fold in the pistachios and dark chocolate.
Divide into 12 70g dough balls.
Chill in the fridge for 30 minutes.
Place on a baking tray and bake for 20 minutes. Bake until golden brown.
