Dark Chocolate & Pistachio Cookies

The combination of dark chocolate and pistachios is honestly a match made in heaven. These are oat based cookies which add that extra nuttiness and richness.
Servings: 12 cookies

Ingredients

  • 140 g melted vegan butter
  • 80 g white sugar
  • 120 g dark brown sugar
  • 30 ml unsweetened vegan milk
  • 125 g plain flour
  • 140 g rolled oats
  • 75 g ground pistachios
  • 60 g 70% dark chocolate
  • 1 tsp vanilla bean paste
  • 0.5 tsp bicarbonate soda
  • 0.3 tsp baking soda

Instructions

  • Pre-heat oven to 170c
  • Combine the melted butter, milk and sugars. Whisk till silky smooth.
  • Add the rolled oats, plain flour, bicarbonate soda and baking powder. Mix till everything is combined.
  • Fold in the pistachios and dark chocolate.
  • Divide into 12 70g dough balls.
  • Chill in the fridge for 30 minutes.
  • Place on a baking tray and bake for 20 minutes. Bake until golden brown.
