Dark Chocolate & Pistachio Cookies
The combination of dark chocolate and pistachios is honestly a match made in heaven. These are oat based cookies which add that extra nuttiness and richness.
Servings: 12 cookies
Ingredients
- 140 g melted vegan butter
- 80 g white sugar
- 120 g dark brown sugar
- 30 ml unsweetened vegan milk
- 125 g plain flour
- 140 g rolled oats
- 75 g ground pistachios
- 60 g 70% dark chocolate
- 1 tsp vanilla bean paste
- 0.5 tsp bicarbonate soda
- 0.3 tsp baking soda
Instructions
- Pre-heat oven to 170c
- Combine the melted butter, milk and sugars. Whisk till silky smooth.
- Add the rolled oats, plain flour, bicarbonate soda and baking powder. Mix till everything is combined.
- Fold in the pistachios and dark chocolate.
- Divide into 12 70g dough balls.
- Chill in the fridge for 30 minutes.
- Place on a baking tray and bake for 20 minutes. Bake until golden brown.
