Dan Dan Noodles

A noodle dish originating in Sichuan City, packed with a whole lot spice and incredibly easy to make.
Servings: 4 People (main)

Equipment

  • Measuring spoons

Ingredients

  • 6 tbsp chilli garlic oil
  • 4 tbsp roasted sesame paste
  • 3 tbsp light soy sauce
  • 2 tsp chinese black vinegar
  • 1.5 tsp grounded sichuan peppercorn
  • 15 tbsp hot vegetable stock
  • 4 servings of cooked noodles (60g) wheat noodles
  • 16 leaves of pak choi blanched and tossed in 1 tbso of chilli oil

Instructions

  • In a bowl whisk together the oil, sesame paste, soy sauce and vinegar
  • Next add the hot broth and grounded peppercorn
  • split the sauce in 4 bowls
  • Add a serving of hot noodles and pak choi into each bowl.
  • Mix together and it's ready to eat
