Ultimate Roast Potatoes
My go to recipe for the crispiest roast potatoes for Christmas day!
Servings: 6 People
Ingredients
- 1.2 kg maris piper potatoes cut in large chunks
- 10 garlic cloves
- leaves from 5 sprigs of thyme
- 10 sage leaves
- 40 g unsalted vegan butter
- olive oil
- 3 tbsp cornflour
- salt
- water
Instructions
- Pre-heat oven to 200c
- Add chunks of potatoes to a large pot of salted boiling water. Cook until edges are fluffy when lifted out of the water.
- Drain potatoes and gently shake in colander to fluff.
- Cover the entire surface of a large baking tray with a good amount of olive oil (the more the better). Add the butter and place the tray in the oven. If you don't have a large baking tray, split into two trays. Do not overcrowd the trays as this will mean it'll take longer to bake.
- Once hot, take out of the oven. Drop in your herbs and garlic cloves.
- Now add your potatoes. Sprinkle over all the flour and toss in oil.
- Place the tray in the oven and bake. Toss the potatoes once the bottom are crispy and then keep baking. Keep doing this until all sides of potatoes are really crispy.
- Sprinkle salt all over the potatoes and they are ready to eat!
