Indian Toastie

This is my take on the classic bombay sandwich, this slightly sweet, slightly savoury and slightly cheesy!
Servings: 5 sandwiches

Ingredients

Potato filling

  • 500 g potatoes diced into small cubes - around 0.5cm
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 small onion finely diced
  • 1 tsp ginger paste
  • 1 green chilli finely chopped
  • 0.5 tsp cumin powder
  • 0.5 tsp coriander powder
  • juice of half a lemon
  • 0.5 tsp turmeric
  • 1 tsp garam masala
  • salt
  • 2 tbsp cooking oil

Green chutney

  • 60 g coriander
  • 20 mint leaves
  • 1 garlic clove
  • thumb size ginger piece
  • 1 green chilli
  • 45 g soaked cashews
  • juice of half a lemon
  • 1 tsp salt
  • 10 tbsp water (use measuring spoons)

For the sandwich

  • mango chutney
  • 200 g cheddar cheese (grate using a fine grater)
  • sliced tomatoes
  • sliced red onions
  • fresh bread
  • butter

Instructions

Potatoes

  • Boil a pot of salted water, add potatoes and cook till soft but not completely falling apart.
  • In a pan heat 2 tbsp of oil. Once hot add the mustard and cumin seeds. Allow the spices to bloom.
  • Now add the onions and cook till completely translucent.
  • Add green chillies and ginger and cook through.
  • Add your spices (cumin powder, coriander powder, turmeric and garam masala) with a splash of water and cook for a few minutes.
  • Now add the cooked potatoes. Mix everything together, you should be left with a mashed texture with a few whole potatoes pieces.
  • Add the lemon juice and salt to taste.

Green chutney

  • Combine everything in a small blender and blitz till smooth. You may need to scrape down and mix between blitzing.
  • Taste for salt and adjust accordingly.

Assemble sandwich

  • Mix your cheese with around 5 tbsp of chutney- you want to create a cheese spread. You can put more or less chutney depending on your heat tolerance.
  • Butter one side of two slides of bread.
  • Take one of the slices, on the unbuttered side spread mango chutney to cover entire surface, then spread the potato filling over the top. Next layer on tomatoes and onion.
  • Take the second slide of bread - on the unbuttered side, spread the cheese mix covering the entire surface.
  • Put this slice on top of rest of the sandwich with the two buttered sides on the outside.
  • Warm a pan on a low to medium heat and place the sandwich down. Slowly let this side brown, once done flip and do the same for the other side. You won't need to steam as everything will heat through if placed on a low to medium heat.
  • It's ready to eat!
