Vegan Gajar (Carrot) Halwa

A indulgent and aromatic Indian dessert made from carrots. This is really easy to make at home and requires minimal ingredients.

Ingredients

  • 500 g finely blended carrots or grated
  • 220 g unsweetened oat or soy milk
  • 100 g single oat or soy cream
  • 20 g unsalted vegan butter
  • 150 g light brown sugar
  • 4 cardamom pods
  • 0.5 tsp ground cardamom
  • 1 tbsp grounded pistachios
  • pinch of saffron

Instructions

  • Add the milk, cream, cardamom pods and saffron in a pot. heat on a low temperature and slowly infuse the liquid. Stop once the liquid is simmering. Remove the pods leaving the in the saffron.
  • Melt the butter in a pan, add the carrot and the infused liquid. Cook on medium heat until majority of the liquid has disappeared and the carrots are cooked.
  • Now add the brown sugar and ground cardamom. Keep cooking until all liquid has disappeared and the mixture sticks together. This will set once cooled.
  • Add the pistachios and mix through.
  • It's ready - best served hot with ice cream!
