Fried Oyster Mushrooms
Unbelievably crispy and so easy to make! A vegan twist on the classic southern fried chicken.

Ingredients
- 300 g oyster mushrooms (large pieces)
Wet ingredients
- 250 g unsweetened yoghurt
- 125 g oat milk
- 1 tsp salt
- 1 tbsp paprika
- 1 tsp garlic granules
- 1 tsp onion powder
- 1 tsp white pepper
Dry ingredients
- 150 g plain flour
- 150 g rice flour
- 2 tbsp garlic granules
- 2 tbsp paprika
- 1 tbsp cayenne powder
- 1 tbsp celery salt
- 1 tbsp ginger powder
- 1.5 tbsp onion powder
- 1 tbsp dried thyme
- 1 tbsp dried Marjoram
- 1 tbsp dried oregano
- Oil for deep frying
Instructions
- Mix all the wet ingredients
- Mix all the dry ingredients
- Take a mushroom and dip into the wet mixture (let the excess drip off) and then fully coat in the dry mixture (press flour into all the edges). Set aside on a tray.
- You'll have a bowl of lumpy flour left, take a mushroom one by one and coat again in this mixture.
- Heat enough oil for deep frying to 180c.
- Drop a few mushrooms into the oil at a time and fry until a deep golden colour. Drain on kitchen towel.
- Enjoy with garlic mayo!
