Fried Oyster Mushrooms

Unbelievably crispy and so easy to make! A vegan twist on the classic southern fried chicken.
Servings: 5 people

Ingredients

  • 300 g oyster mushrooms (large pieces)

Wet ingredients

  • 250 g unsweetened yoghurt
  • 125 g oat milk
  • 1 tsp salt
  • 1 tbsp paprika
  • 1 tsp garlic granules
  • 1 tsp onion powder
  • 1 tsp white pepper

Dry ingredients

  • 150 g plain flour
  • 150 g rice flour
  • 2 tbsp garlic granules
  • 2 tbsp paprika
  • 1 tbsp cayenne powder
  • 1 tbsp celery salt
  • 1 tbsp ginger powder
  • 1.5 tbsp onion powder
  • 1 tbsp dried thyme
  • 1 tbsp dried Marjoram
  • 1 tbsp dried oregano
  • Oil for deep frying

Instructions

  • Mix all the wet ingredients
  • Mix all the dry ingredients
  • Take a mushroom and dip into the wet mixture (let the excess drip off) and then fully coat in the dry mixture (press flour into all the edges). Set aside on a tray.
  • You'll have a bowl of lumpy flour left, take a mushroom one by one and coat again in this mixture.
  • Heat enough oil for deep frying to 180c.
  • Drop a few mushrooms into the oil at a time and fry until a deep golden colour. Drain on kitchen towel.
  • Enjoy with garlic mayo!
